Brazil Nutty Salad

A pretty salad incorporating complementary flavours and a slight crunchiness.
This is an English dish.

Ingredients

3 or 4 FAIRTRADE bananas
1 FAIRTRADE lemon
125 gm FAIRTRADE Brazil Nuts
50 ml Vinaigrette
several lettuce leaves

Lemons
Bananas
Brazil Nuts

Notes

Some lettuce is used in the mixture, some is used as bedding / decoration.

Method

Preparation

Juice the lemon discarding pith and peel.
Skin the bananas and slice up thinly.
Put the bananas in a bowl and add the lemon juice. Stir gently to ensure all banana slices are coated with juice.
Wash a couple of lettuce leaves and shred for the mixture.
Make up the vinaigrette dressing.
Chop the brazil nuts.

Assembly

Put the shredded lettuce into a mixing bowl and add the vinaigrette. Toss to coat the lettuce.
Add the brazil nuts and half of the bananas, and toss to make sure everything has a coating of dressing.

To serve

Wash some more lettude and use it to decoratively line a serving dish.
Put the nuts and banana mix in the dish, and surround it with the remaining slices of banana. (Be creative).
