Chicken Coriander

The coriander gives a mild spicy flavour.
A sort of English quickie.
Could be a snack or a main course meat dish. Serves 4.

Ingredients

45 ml sunflower oil
2 cloves garlic, peeled and chopped
450g of chicken breast cut into strips
15 ml Fair Trade ground coriander
1 red pepper sliced
1 bunch of spring onions sliced
Zest and juice of 1 FAIRTRADE lemon
30 ml FAIRTRADE orange juice
1 bag mixed lettuce leaves

Method

Heat the oil in a frying pan or wok and fry the chicken and garlic and coriander for 5 minutes or until browned.
Add the pepper and spring onion and fry for 1 to 2 minutes.
Stir in the lemon zest, lemon juice and orange juice and heat through.
Toss into the salad and serve immediately.

To serve

Eat hot.
