Jerk Seasoning

This is a vivid spicy mix typical of the culture of the Caribbean.
Used on white colour meats such as Chicken and Pork.
This Jamaican recipe like the English Devil Sauce is intended to be used as a marinade.

Ingredients

1 bunch spring onions
10 ml FAIRTRADE freshly ground black pepper
4 cloves garlic
3 FAIRTRADE lemons
25 ml sunflower oil
25 ml soy sauce
10 ml dried thyme
5 ml allspice
5 ml chili pepper
20 whole cloves
2.5 ml salt
5 ml FAIRTRADE raw cane sugar

Method

Preparation

Trim the onions and chop fine.
Deskin the garlic.

Cooking

Put all of the ingredients in a blender and "whizz" to form a runny paste.

To use

Use as a marinade on chicken or pork.
Store in a sealed glass jar for later use.

Variation

Vary the hot spice according to taste.
For more "zing" use a fresh green chili pepper or two.
For more aroma, use a little cinnamon.
For more bite include a teaspoon of grated or dried ginger.
