Peanut Cookies

This is a dish ascribed to Malawi.

Ingredients

150 gm self raising flour
57 gm margarine or butter
75 gm FAIRTRADE raw cane sugar
1 hens egg
100 gm FAIRTRADE salted peanuts
a little milk
FAIRTRADE Sources
Bananas
Cashew Nuts
Peanuts (Ground Nuts)
Sugar
Raisins
Sultanas

Method

Preparation

If using whole peanuts, skip this step.
Separate 75 gm of peanuts and chop or crush as desired. (Rolling pin over nuts in a plastic foodbag works well).
Mix together the prepared nuts, flour, butter, sugar.
Add the egg and just enough milk to make a stiff mixture.
Put one dessert spoonful at a time onto a well greased baking sheet and flatten slightly.
Keep them well apart as they flatten during cooking.
Sprinkle the rest of the peanuts on top.

Cooking


Bake in a preheated oven (Gas Mark 5) for 15 to 20 minutes until pale brown and golden.

To serve

Allow to cool before consumption.

Variations


a) 50 gm FAIRTRADE Sultanas can be added to the mix.
b) To make this into a vegan recipe, omit the egg and milk, and use a ripe FAIRTRADE banana in place of the egg.
c) Use FAIRTRADE Cashew Nuts in place of the peanuts.
