Popular Potato Salad

Kids need energy as well as healthy food, English potatoes in a tangy sauce do the trick nicely.


Ingredients

500 gm organic local potatoes
120 ml mayonnaise
15 ml FAIRTRADE lemon juice
15 ml Zaytoun FAIRTRADE Palestinian olive oil
2.5 ml salt
2.5 ml freshly ground FAIRTRADE black pepper
30 ml chopped fresh chives
1 small leek, finely chopped

Method

Boil enough water to cover the potatoes well.
Peel the potatoes and cut into “cubes” 1 cm approx.
Cook the potato cubes for about 12 to 15 minutes. Try one to see if they are cooked. If they start to disintegrate they are over-cooked.
Once cooked, drain off the water and allow the cooked potatoes to cool. Put the potatoes in a mixing bowl.
Mix together the mayonnaise, lemon juice, salt, oil, pepper 1 tbsp of the chopped chives.
Add the mixture to the potatoes and toss or turn gently until the potatoes are coated.
Sprinkle on the remaining chives and scatter the leeks around the edge of the bowl.

To serve

Allow to chill in the fridge for 30 mins before serving.

Variation

Substitute fresh or dried mint for the chives, or leave out altogether.
