Rice with Millet

Toasted golden millet grains with good rice.
With acknowledgement to New Internationalist as inspiration.
This is a dish from the Korean peninsula.

Ingredients

125 gm hulled millet
500 gm FAIRTRADE long grain brown rice
1 Litre stock
salt and FAIRTRADE ground black pepper

Method

Preparation
Toast the millet in a non stick pan for a few minutes until golden and starting to crack.
Put the rice and millet together in a bowl and just cover with stock.
Allow to stand for 45 minutes or more.

Cooking
Turn the ricy millet into a heavy pan and add the seasoning and the rest of the stock.
Heat to boiling, reduct to a simmer and simmer until the water is absorbed and the grains are cooked.

A chopped onion fried in with some aromatic spices makes this even more interesting.

To serve

Decorate with green leaves of parsley or coriander to serve.
Serve as an accompaniment to a meat or poultry dish, or with vegetables.
Serve with a mexican sauce as a main course.
