Tzatziki

Country of origin: Greece
Refreshing mint aromas in a creamy yoghurt sauce.
Use as a mezze component, as a sauce with fried zucchini or aubergine, or as a sauce with kebabs or chicken.

Ingredients

5 ml wine vinegar
2 organic cloves garlic
30 ml Zaytoun FAIRTRADE olive oil
175 ml plain yoghurt
half organic cucumber
a few (5) fresh mint leaves
a pinch salt

Method

Preparation
Skin and crush the garlic into a bowl.
Wash and chop the mint leaves.
Assembly
Mix the oil, vinegar and garlic in a bowl.
Add the yogurt and mix until all ingredients are smoothly combined. Add in the cucumber, the chopped mint, and salt and mix together well.

To serve

Serve chilled.
Meze: Serve with Retsina.

Variation

Use sheeps milk yoghurt for a thicker creamier tzatziki.
